Grilled meat and fish are as canonical to Japanese cuisine as sushi and ramen🥢

Until the 19th century they were cooked on an open hearth, the irori, which was set up right in the center of the living room. In modern Japanese homes there is simply no room for such an oven, but the tradition of grilling at home has not lost its relevance.
